I served this with store  bought garlic bread (yes I should’ve made it myself, but tonight I couldn’ t be bothered.  The recipe is below 🙂

Home Made Chicken SoupIngredients:

  • 4 chicken breasts, cut into cubes
  • 2 onions, diced
  • 2 cloves garlic, chopped
  • 6 small leeks
  • 3 carrots chopped
  • 4 medium sweet potatoes peeled and diced
  • 1lt chicken stock
  • 2 bay leaves
  • 1 can cherry tomatoes in sauce
  • 1Tb butter
  • 1 can of condensed chicken and mushroom soup

What you need:

  • 1 glass of Pinotage
  • Music
  • 1 pressure cooker

Step 1:

Pour a glass of Pinotage, and put on your favourite music (or invite your family into the kitchen for a lekker chat while you prep)

Step 2:

  • Cook onions and chopped garlic in butter until translucent
  • Add two large bay leaves (or 3 medium, or 4 small)
  • Add chicken and braise until slightly cooked through

Step 3:

  • Add can of cherry tomatoes in sauce
  • Add 800ml of chicken stock
  • Pressure cook for 20 minutes

Step 4:

  • Add all remaining vegetables
  • Pressure cook for around 30 to 40 minutes until all the veggies are soft

Step 5:

  • Stir in can of condensed mushroom soup

Note: you’ll see the soup thicken immediately. Not just because of the sauce, but also because your veggies and chicken has softened and will be breaking up. Don’t stir it too much, and don’t blitz it. Not necessary. Blits if you like a thin soup
